  • 1 large tomato, diced small, with liquid reserved
  • 1/4 to 1/2 onion, minced
  • 1 jalapeno, minced (more or less for spicier or milder salsa)
  • 1 to 2 teaspoons cilantro and/or epazote
  • 1 tablespoon lime juice
  • salt to taste

Combine all. Cover the bowl. Chill in the fridge for a couple hours.

Serve with tortilla chips.

Preparation time: 10 minutes (start a couple hours early)
